Technical characteristics

  Universal dismountable rotary convectional ovens are intended for high quality baking of:
•bakery products
•pan and oven-bottom bread of wheat flour and rye flour
•pastry in the conditions of intensive operation in the bakery plants and pastry producing enterprises.
  These types of ovens work without the reconfiguration of air streams in the baking chamber. The ovens ensures baking of high quality products of wide assortment, wonderfully backed products, dough stand up, uniform surface, ideal shine of bread crust.
The ovens are dismountable, that allows setting them up and carrying them through all standard doorways. The coating, door, walls, ceiling, floor, baffle of the baking chamber are made of stainless steel.
  Oven control system is constructed with the microprocessor-based controller and start-control devices of domestic and foreign manufacture. The control system guarantees minimal servicing, high operating reliability, wide menu function of the oven :
•programs input, revision and storage  in automated operation (up to one hundred of 10-steps programs of baking) with the opportunity to set technological parameter in each step
•program update (correction) during baking process
•setting and indication of clockwise reading and counting down reading of the baking time
•visualization of textual information about service conditions, error conditions and operation of the oven.
The control board is located at the face of the oven. It allows placing the ovens in line with the minimal gasp of 5 cm.
The oven can work at gas (diesel oil) or at the electricity. The heat exchanger can be replaced with tubular electric heater (and vice versa).
Overhead rotary drive of the tray trolley, low baffler of the baking chamber, short ramp, head assembly of the tray fixation allows to avoid the shaking of the dough pieces while the tray rolling in; the trolley is not displaced while baking.
High loading capacity of the bearing assembly of the platform is due to the selforientating axel bearing, which is sunk in the oil reservoir; it allows baking the products in the regime of intensive exploitation of the oven.
The trolley rotates.
  Efficient system of air circulation with centrifugal blower makes the uniform air stream in the baking chamber of the optimal speed. That allows producing uniformly baked products of wide assortment with uniform shine of the surface without the jalousie adjustment.
The option «pre-heating» allows to minimize heat losses while trolley roll in to the baking chamber with the dough pieces. The option «pre-heating» shortens the time of baking. High-powered system of steam humidification of tray-type ensures the portion steam supply to the baking chamber. Operating safety.
  Efficiency of the oven is ensured with:
•using of compound two-layer heat-insulation
•insulated floor made of stainless steel
•the door construction has double-deck adjustable locks and hinges; that guarantees accurate adjusting of the door according to the height and the quality of  adjoining to the door opening, quantitative thermo-insulation
•shaft sealing of the trolley rotation
•block automatic burners "ELCO"
•optimal system starting control and burner operation, heat exchanger construction with efficiency output.
  Efficiency and serviceable life is provided with:
•the construction of the heating and heat-transfer device made of heat-resistant steel
•easy access to all units and devices for the inspection and servicing.
In compressing with the previous modification the ovens guarantee:
•excellent uniformity of the surface of the baked products, the jalousie does not demand resetting
•baking in one tray trolley of different types of bread and pastry of the same weight
•efficiency output
•cutting time of baking process
•cutting time of heating
•reduction of  energy consumption
•easy servicing of steam generator, efficient steam humidification if the water pressure is not lower 1,2 kg/cm
•cutting time of the servicing of the platform unit
